Good Grub!!!

Last night we decided to have a Yummy Cafe Rio inspired dinner. I love the combination of lime and cilantro so this was the perfect meal for me :). For dessert we decided to have Fried Ice Cream which turned out really good! So I wanted to share these yummy recipes- most of which came from Allrecipes.com (My favorite recipe site)! I do love the cooking blogs that take a picture of every single step, but I didn't have time last night to take pics. Enjoy!

RECIPE for PORK BARBACOA (similar to Cafe Rio's)From my good friend Heather!
2-3 lb. pork roast
1 TBS cumin
1 cup brown sugar
12 oz bottle La Victoria taco sauce
20 ounce Coke

Place pork roast in a crock pot, add water halfway covering roast. Cook on low for 12 hours. Drain water and add remaining ingredients. Cook 4 more hours. Shred pork and cook 2 more hours. Per Serving: Place tortilla in oven safe bowl and sprinkle with cheese. Keep in the oven until the cheese melts. Then add Lime Cilantro Rice, Black beans and Pork Barbacoa. Add other toppings such as tomatoes, lettuce, cheese, avacados and sour cream. YUM!



Lime Cilantro Rice -Allrecipes.com

Ingredients:
2 cups water
1 tablespoon butter
1 cup long-grain white rice
1 teaspoon lime zest
2 tablespoons fresh lime juice (Start with 1 TB and add to the taste)
1/2 cup chopped cilantro
Directions:
1. Bring the water to a boil; stir the butter and rice into the water. Cover, reduce heat to low, and simmer until the rice is tender, about 20 minutes.

2.Stir the lime zest, lime juice, and cilantro into the cooked rice just before serving.


Amusement Park Cornbread- Allrecipes.com

(Last night I halved the recipe and used an 8x8 baking dish)

INGREDIENTS:
2/3 cup white sugar
1 teaspoon salt
1/3 cup butter, softened
1 teaspoon vanilla extract
2 eggs
2 cups all-purpose flour
1 tablespoon baking powder
3/4 cup cornmeal
1 1/3 cups milk

DIRECTIONS:

Preheat oven to 400 degrees F. Lightly grease an 9 x13 baking dish.
In a large bowl, beat together sugar, salt, butter and vanilla until creamy. Stir in eggs one at a time, beating well after each addition. In a separate bowl, mix together flour, baking powder and cornmeal. Stir flour mixture into egg mixture alternately with the milk. Beat well until blended. Bake in preheated oven for 20 minutes, or until golden brown. Serve warm.


Fried Ice Cream- Allrecipes.com

Ingredients:
1 quart vanilla ice cream
3 cups crushed cornflakes cereal or Vanilla Wafers (place in blender)
1 to 2 teaspoon ground cinnamon
3 egg whites
2 quarts oil for frying

Directions:
1.Scoop ice cream into 8 - 1/2 cup sized balls. Place on baking sheet and freeze until firm, about 1 hour.
2.In a shallow dish, combine cornflakes and cinnamon. In another dish, beat egg whites until foamy. Roll ice cream balls in egg whites, then in cornflakes, covering ice cream completely. Repeat if necessary. Freeze again until firm, 3 hours.
3.In deep fryer or large, heavy saucepan, heat oil to 375 degrees F (190 degrees C).
4.Using a basket or slotted spoon, fry ice cream balls 1 or 2 at a time, for 10 to 15 seconds, until golden. Drain quickly on paper towels and serve immediately.

What a lucky family to eat such good grub! Just reading the recipes made my mouth water. I just might have to give those recipes a try!

You need to get the recipe for the creamy tomatillo sauce. I believe it is also on the Allrecipes.com Tom and I made it with our cafe rio and it was sooooo good.

Ha ha, I remember the last time I saw you was when we ate this together! SAD!! That was almost two years ago. Why does time have to go so fast!? Man, I miss you guys. Glad you were able to have such a nice dinner! I'm getting hungry just sitting here! Coming to Utah any time soon??? :)

Try it if you want to change things up a little. It's super yummy too!!
